Fresh milk is treated with ultra-high temperature, at approximately 140° C, for a few seconds and then packaged into aseptic packaging. UHT cream can be stored in room temperature as it does not require refrigeration. It is well suited to be stored in conditions where reliable cooling devices are not always available.
